Perfect for a warm spring or summer evening, these Grilled Chipotle Shrimp Tacos are so easy to make and healthy too! We enjoyed these on the patio while we watched the peaceful deer in our backyard.
Grilled Chipotle Shrimp Tacos
1/2 pound raw shrimp (peeled and tails removed)
1 tablespoon chipotle seasoning
1 cup cabbage, shredded
1/2 cup sour cream
2 tablespoons taco seasoning
1 jalapeno pepper, minced
1/2 cup cilantro leaves (1/4 cup minced, 1/4 cup torn)
2 limes
1 avocado, diced
corn or flour tortillas
Heat up your grill...
Using four or five skewers, thread shrimp onto the skewers (about 5 or 6 shrimp per skewer depending on size). Tip: if you are using metal, no need to worry... but if you are using wooden skewers place them on a rimmed baking sheet in a layer of water for 5 to 10 minutes before you slide the shrimp on. This will keep the wooden skewers from burning on the grill.
Sprinkle the chipotle seasoning evenly on the shrimp. Grill shrimp for about 5 to 7 minutes until cooked through.
In a small bowl, mix the sour cream, taco seasoning, pepper, minced cilantro, and juice of 1 lime to form a sauce. Mix about half of the sauce with the shredded cabbage in a medium bowl. Reserve the remaining sauce to top off the tacos later.
Remove the shrimp from the skewers and place in warmed tortillas. Top with the cabbage mixture, some avocado, a dollop of the sauce, and some cilantro leaves. Serve with lime wedges.
Chips and salsa on the side are always good too! Enjoy!
